Whether you’re enjoying your poutine eggs benny in the family-friendly dining room, taking in the views on the patio with your combo or picking up your authentic Rueben for a riverside picnic, Chez François has something for everyone and every appetite.
General Manager Gabriel Daneau says diners from all over Canada (and beyond) return again and again for François’ gifted approach to simple, traditional food with special attention to seasonings, sauces and flavour combinations. From merguez lamb sausages from Canmore’s Valbella Meats to local art on the walls and local beer in the fridge, Francois and the culinary team bring the best of the Bow Valley together in interesting and delicious ways.
We treated ourselves to something sweet and something savoury for breakfast with the smoked salmon benedict with apple cheddar crepes on the side and an order of strawberry cream cheese French toast. The Benedict provided that satisfying Instagrammable moment when the perfectly done poached egg melts into the homemade Hollandaise sauce over a chewy English muffin and fresh lox for a beautiful and balanced dish. The crepes evoked hot apple pie with melted cheddar - but in a format perfectly acceptable for breakfast! The French toast featured sweet, fresh strawberries and silky cream cheese on chewy and delicious baguette rounds.
While Chez François built its reputation on all-day breakfast, over the last couple of years, the take-out program has gained a lot of traction as the culinary team branched out to more travel-friendly options for breakfast and lunch. Hotel guests, visitors and locals alike can order online, pick up their lunch and head out to explore and enjoy their Bow Valley adventure.
All dishes are made from scratch with fresh ingredients that demonstrate the pride of craft and quality in the Chez François kitchen, while diners are treated to a warm welcome, smiling service and a diverse menu for any meal of the day.
