The fine dining experience at Canmore’s Malcolm Hotel has been delighting guests since the Stirling Dining Room and Lounge opened in 2018. This November, Chef Graham executed a complete refresh of the menu that celebrates the French roots of fine dining, infused with the wild and fresh ingredients of the Rockies. 

“We’re thrilled to be launching this new menu,” says Chef Graham. “It’s got a bit of a French twist, but is still very much grounded in the region.” A great example is the Bison Tenderloin en Croute, a Wellington-style presentation about which Chef says he’s particularly excited. 

We always enjoy and recommend the King’s Table experience. Here’s a walk through of what’s new and delicious for Winter 2024. 

Opening courses span land and sea from a rich and creamy Scallop St. Jacques featuring mashed potato, Manchego cheese and a white wine sauce to an ultra-rich crispy croissant topped with duck foie-gras and sprinkled with crushed pistachio and served with a tangy black currant coulis for balance. 

Entrees are where this new menu really sparkles with French classics like Duck à l’Orange and White Bean Cassoulet to a creamy Lobster Risotto (not to be missed) and an earthy pancetta-and-sage-fried Sablefish with a fried mushroom rice cake and asparagus. 

For dessert, we enjoyed Stirling Dining Room and Lounge’s take on a Mont-Blanc: the Gateau aux Marrons. This chestnut mousse atop a dacquoise (meringue) cake is drizzled in dark chocolate and accompanied by black-currant coulis that tied back to the fois-gras starter. Next time, we’ve got our eye on that Earl Grey Magdelena featuring whipped ricotta cheese, orange and pistachio. 

The King’s Table prix fixe menu is available for any appetite with three, five and seven-course options with vegetarian menus available in three- and five-courses. Take advantage of the exceptionally knowledgeable and talented staff and add a sommelier’s pairing to your experience. 

If you are imbibing, don’t miss out on the exceptional cocktail program at Stirling Grill. We loved the maple old fashioned with blended scotch and maple syrup combined with rosemary and lemon. Smoked on a piece of maple, this is the ultimate Scottish-Canadian cocktail. 

Add the gorgeous dining room with a spectacular view of Policeman’s Creek to Chef Graham’s exceptional food and you’re treating yourself to one of the Bow Valley’s best fine dining experiences at Stirling Dining Room and Lounge.
