Stirling Grill’s King’s Table Menu Offers Peak Dining in the Bow Valley
Dining at the Stirling Grill in Canmore’s Malcolm Hotel is an experience unlike any other in the Bow Valley. The chic hotel with a stylized Highland theme gives way to an elegant dining room that sets the stage for a meal to remember. No detail is overlooked here with white linens, sparkling glassware and luxurious finishes are second only to the incredible view outside the wall of windows.
If you’re going to treat yourself to a meal at the Stirling Grill, go the extra step and enjoy the King’s Table Menu, in which patrons place their trust in the hands of chef Graham Smith, who selects five courses that highlight what’s fresh, what’s in season and what inspires him at the moment.
Having travelled the world and worked in some of Canada’s finest hotels, Chef Smith’s skill and passion for fine food shines through in the tasting menu, which can be paired with wine carefully selected by the chef and sommelier to bring out the best in the food and the wine.
Having arrived in the dining room just as summer was fading to fall, we were squarely in harvest season and Chef Smith took full advantage.
Our journey began with a beet and brioche quinoa featuring gorgeous, ruby red beet alongside a crispy brioche ring nestled in quinoa and topped with peppered apricot, feta, microgreens. It was a beautiful starter highlighting the earthy flavours of the season.
Next, soft-shell crab in a Thai curry sauce arrived in full splendour. Coated in crispy tempura, this unexpected dish delighted with brilliant colours of carrot and red pepper drizzled in a brilliant yellow curry sauce. The dish was perfectly balanced in texture and flavour with elements of crisp, crunch and cream while flavours of southeast Asia delighted the senses with a hint of heat and a tonne of flavour.
The lobster risotto that followed was an inspired marriage of earth and surf with a plethora of musky mushrooms in a creamy risotto topped with red-miso lobster tail that was bright, tangy and delicious. This dish was comfort food at its finest and a perfect fit for a crisp fall evening.
The main event was a tender beef brisket atop crispy, cheesy potato croquettes and topped with fresh seasonal sweet corn and feta providing a bright balance to the delicious brisket. The time and care that went into this dish comes through in flavour and presentation.
For dessert, we enjoyed a chocolate cherry creme that featured the silkiest chocolate mousse with a dollop vanilla creme and topped with tart cherries, which brought a brightness to a rich and creamy dessert.
