The Evergreen in the Royal Canadian Lodge is one of those Bow Valley institutions that has become a favourite of visitors and locals alike. With renowned chef Max Charbonneau at the helm, the menu is diverse, inspired and features the best, locally sourced ingredients. 

With a breakfast offering that ranges from a healthy hiker’s breakfast featuring Alberta’s Bleswold yogurt to a decadent chorizo sausage benny, Evergreen is a great destination for the most important meal of the day. 

Well known for its delicious burgers, the Evergreen offers a daily $20 gourmet beef or bison burger and craft beer special that features local makers including Grizzly Paw and Village Breweries. Happy hour in the lounge also has great deals on delicious beef sliders, a light and fresh Margherita flatbread, fall-off-the-bone slow braised Alberta pork ribs and a daily featured cocktail.

The culinary team’s skill shines on the dinner menu, where diners can choose from a broad range of soups, salads and chef’s choice entrees that highlight the best ingredients assembled with creativity and craft. 

The Oceanwise albacore tuna loin is not only beautiful with rare tuna filets crusted with black sesame seeds on a bed of julienned cucumbers, but is also perfectly balanced between the rich and creamy tuna with a bright miso vinaigrette punctuated with crunchy pickled red onions. Enjoy this gorgeous dish as an appetizer to share or as a main all to yourself. 

Evergreen’s duck l’orange features Brome Lake duck confit to tender magnificence and then roasted to perfect a crispy skin. Accompanied by root vegetables freshly picked from Calgary-area Poplar Bluff Farm the duck is doused in a delicious veal reduction seasoned with orange and oregano. Topped with fresh orange slices, this dish hits all the right notes of sweet, salty, crispy and creamy. 

If seafood is your go-to, do try the Skuna Bay raised salmon from Vancouver island. This tender and flaky fish is perfectly done to medium rareness and lays on a creamy cloud of cauliflower puree with asparagus, roasted, vine-ripened tomatoes and drizzles with a delicious citrus truffle vinaigrette, which really showcases this chef’s attention to detail and dedication to craft. 

Visit The Evergreen daily from 7-11 a.m. for breakfast and 4-9 Tuesday through Sunday for dinner with happy-hour specials in the lounge from 4-6 p.m.
